PARAMETERS | SENSORY EVALUATION |
| Species | Corresponds to that declared by the exporter. |
| Presentation | Corresponds to that declared by the exporter and must include all the aspects indicated by the exporter. (Example: thorns, skin, type of cut, type of presentation, packaging medium, among others). |
| Appearance | The product is well preserved, with a normal appearance. It does not present dehydration in more than 10% of the surface of the product, it does not contain foreign matter or gelatinous alterations in the meat that affects more than 5%, by weight, of the sample. |
| Normal smell | Characteristic of the species and presentation. There are no abnormal aromas sign of decomposition or rancidity. |
| Turgid Texture | Firm and tender, typical of the species. |
| Parasites | Absence of visible parasites and their cysts. |
| Natural color | Typical of the species. |
